"Celiac disease can develop in adults"

Article today in the L.A. Times about Celiac Disease -- check it out here.

I find this quote to be most interesting: "What has changed in the environment in the last 30 years?" [Dr. Alessio] Fasano said.  "We have more antibiotics, more vaccinations, bioengineered foods, chemicals we haven't been exposed to, and pollutants that haven't been around in the concentrations that we have now."]

Horribly true.  After reading Eating Animals this summer, I'm much more watchful of what I'm eating.  It's an interesting/scary read -- read at your own risk!

Do you love it or do you love it?
